Hi -- For those who do not know me, I am Kathy Kromarek. I have worked at the Scranton Super Valu for fifteen years and have recently moved into the position of Super Valu manager. Part of my new responsibilities is to make the store more useful for all of our Equity patrons. I will try and fill you in on some of the new changes that have taken place already, one that is ready to start soon, and a couple that are still in the "idea" phase. I appreciate any input into current programs, future programs or potential programs that you would like to see implemented. Feel free to stop in and talk to me anytime.

New Freezers - New Look --Almost all of the freezers and coolers have been replaced with brand new ones-some of the old ones were thirty years old! Admittedly this has been a year long hassle-but everything is up and running great now. We even own spare compressors in case anything were to fail. All food in the freezers has been replaced with new.

Let me introduce a new program that starts December 1, 2005 and goes until November 30, 2006. The Equity board and management have created a program to increase business and keep the store viable. This program will allow you to use a portion of your stock credits that you already own in the Equity to help purchase groceries through the Super Valu. That means you don't have to wait until age 70 to take advantage of your stock credits. It makes sense to use this early stock retirement program as the value of a dollar will likely be less when you reach age 70 than it is now. Every purchase from the Super Valu that amounts to $20 or more will be recorded. Next December (2006) you will receive a check in the mail for ten percent of everything you have purchased at Scranton Super Valu (up to the value of the stock you own in the Equity)! This could amount to a large tax free check right before Christmas! This program does not apply to businesses, resale, or anyone buying groceries at a discount. Your Equity bills must be kept current during the year. (A complete list of rules is available at the Super Valu).

Future Plans -- Satisified Customers -- In the near future look for other changes in the store -- and in our programs! One idea that was suggested is to meet any Super Valu ad within 150 miles. This sounds like a great idea and will be looked at closer. There would be a few details to iron out, like what if we don't stock a particular item (but I am working on this). I would be open to any new ideas that are brought to my attention.

We will be introducing "Traditions" Fine Porcelain China beginning January 15, 2006. This will be an eight week program. Check it out!

By the way, if you should ever buy anything in the Super Valu that is spoiled, bring it back and it will be replaced with a smile and a free bakery item for letting us know about the problem! If you find anything on the shelf that is out dated--you will get it for half price. You are doing us a huge favor by letting us know if there is a problem! We are working hard to make sure our customers are happy and satisfied but at times we may miss something and appreciate it being brought to our attention.

I believe that our prices are competitive with any store in the area. Thanks to all of our loyal customers for the past years' business.

Strawberry Spinach Salad

2 Tbsp sesame seeds---------------------1 Tbsp minced onion
1 Tbsp poppy seeds----------------------1/2 C White Sugar
1/2 C olive oil----------------------------1/4 C distilled white vinegar
1/4 tsp paprika---------------------------1/4 tsp Worcestershire sauce
2 teaspoons baking powder--------------1/4 C almonds, blanches & slivered
10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
1 quart strawberries - cleaned, hulled and sliced

  1. In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover and chill for one hour.
  2. In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.

Awesome Carrot Cake with Cream Cheese Frosting

3 C grated carrots
2 C flour
2 C white sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
4 eggs
1 1/2 C vegetable oil
1 1/4 tsp vanilla extract
1 (8 ounce) can crushed pineapple with juice
3/4 C chopped pecans

3 1/2 C confectioners' sugar
1 (8 ounce) package cream cheese
1/2 C butter, softened
1 1/4 tsp vanilla extract
1 C chopped pecans

Directions:

  1. Preheat oven to 350 degrees F. Grease and flour a 9X13 inch pan.
  2. In a large bowl, combine grated carrots, flour, white sugar, baking soda, baking powder, salt and cinnamon. Stir in eggs, oil,1 1/4 tsp vanilla, pineapple and 3/4 cup chopped pecans. Spoon batter into prepared pan.
  3. Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  4. To Make Frosting: In a medium bowl, combine confectioners' sugar, cream cheese, 1/2 cup butter or margarine and 1 1/4 teaspoons vanilla. Beat until smooth, then stir in 1 cup chopped pecans. Spread on cooled cake.

    Crustless Cranberry Pie


    1 cup all-purpose flour--------------------1/2 cup chopped walnut
    1 cup white sugar-------------------------1/2 cup butter, melted
    1/4 teaspoon salt--------------------------2 eggs
    2 cups cranberries-------------------------1 teaspoon almond extract

    1. Preheat oven to 350 degrees F. Grease one 9 inch pie pan.
    2. Combine the flour, sugar and salt. Stir in the cranberries and the walnuts and toss to coat. Stir in the butter, beaten eggs and almond extract. If you are using frozen cranberries the mixture will be very thick. Spread the batter into the prepared pan.
    3. Bake at 350 degrees F for 40 minutes or until a wooden pick inserted near the center comes out clean. Serve warm with shipped cream or ice cream. Makes about 8 servings.
